Oh Monday, how quickly you seem to show up. Luckily for us over in Amsterdam, it’s a short week thanks to King’s Day celebrations! On Thursday, the whole country basically goes into party mode + work shuts down. Since I wasn’t here for the fun last year, we’re going to check out all the craziness this time (fingers crossed 🤞🏽the weather cooperates).
But, before I get going on a random tangent, let’s chat weekending shenanigans that we got into!
| FRIDAY (EVENING)
Ok, I’m legit only throwing this in there because I am so ridiculously proud of this. I made biscotti. Haha. I love a good biscotti with my tea/coffee & since I’ve been trying to eat healthier, I have been staying away from eating too many sugar-filled cookies.
I found a recipe from a healthy blogger that I follow and ICYMI from my Instastories, it turned out awful. I mean, it was so gross that I legit wrapped it up in the parchment paper I baked it on and threw it all in the trash. So then I went to another recipe I found and after some tweaks, turned it into a much healthier version than what was suggested. Nailed it on the head with my updated recipe and the biscotti turned out incredible.
After it finished cooling, I dipped it in melted chocolate & obviously topped them off with sprinkles. What is a good biscotti with my signature sprinkles, right?!
It’s actually a super easy dough to make, it just takes a little time to bake. Anyone interested in the recipe? Shall I write it up to share?
After a quick trip to the gym in the morning, we met up with some of our friends to check out the Harry Potter exhibit in a nearby city called Utrecht. The exhibit was obviously smaller than the one we saw in London, but it was fun, nonetheless.
I will say, however, that I was very surprised that they hadn’t set up a tent with HP treats such as Butterbeer or the trolly items from the train. I wish they would have because it would’ve been so fun to relax & hang out with a cup of BB 💁🏻
The whole weekend was pretty great, but Sunday turned out to be such a perfect day. We didn’t have any plans for the day, so we took it as it came. After a leisure cup of coffee & relaxing in the morning, we made our way to Bakers & Roasters, one of our favorite brunch spots!
We ate, walked around for a bit, and then came home to relax. While Amir took off to play basketball with a friend, I cuddled up in the rocking chair with my blanket, a cup of white lemon tea + biscotti, and my most recent read! Sofia was sleeping which only helped with the mom-relaxation time! Haha.
We rounded out the evening with a stroll around our neighborhood and then came back and crashed out, lol!
Overall, a totally relaxing & enjoyable weekend if you ask me!
