What’s Cookin’: Dinner & Desserts Recipe Roundup

Over the years that Amir and I have been married, one of the things we’ve come to be known for is our mutual love of food. Through this, I’ve grown to really enjoy trying new recipes & I love when Amir exclaims that I’ve made a new dish that needs to be added to our rotation.

Often when I post up my food pictures (yes, I’m that annoying person) on Snapchat (username: thelittleaslam) or Instagram, I get questions about what the recipe was or how I made it/tweaks I’ve made. Going forward, I’m going to do my best to give y’all a roundup of what I’ve cooked and whether it was a winner or a total failure! Not only does this allow me to share recipes with y’all, but it keeps me accountable on if I’m actually eating as healthy as I’m trying to 😉 win-win, am I right?!

DINNER

Results:
 WINNER – WINNER – WINNER.
These dinner recipes were quick (30-40 minutes from start to finish) and full of flavor. We like to eat spicy food in our house, so I spiced everything up with extra smoked paprika, red chili flakes, and/or cayenne pepper. I served the cilantro lime chicken & the spicy baked chicken over spinach which was the perfect healthy alternative, but the spicy eggplant dish was best served with rice!

Recipes:
Cilantro Lime Chicken with Avocado Salsa : I cut out the red wine vinegar and it was all good!
Spicy Eggplant & Chicken Stirfry : Forgot to buy scallions, so I left them out & I substituted coconut oil for the canola oil.
Crispy Spicy Baked Chicken :  I used whole wheat flour instead of tapioca flour, substituted the hot sauce/Buffalo sauce for sriracha + chili sauce & I used a little bit of raspberry preserves instead of the strawberry. You could actually leave out the preserves completely if you don’t care for them. I also try to buy these ingredients as organic as I can to cut down on the processed & extra sugars.

DESSERTS

Results: Again, total winners. I have been eating all of these on rotation this week and I don’t think I’ll be stopping any time soon. If you’re looking for a “dessert” item that helps take away the need for all the sugar, these are what you need to make asap.

Fudge Brownie Larabar Copycat
Mixed Berry Smoothie Bowl : I’ve found recipes for these on Pinterest, but I made mine a little differently. So here you go: 1.5 cups frozen berries + 1/2 cup unsweetened almond milk + 1/2 banana + 1 tablespoon maca + 1 tablespoon chia seeds = Blend. The mixture should be nice and thick! Pour into bowl. Top with the other 1/2 banana, add some sliced almonds, coconut flakes, and a small bit of granola for cruch. Now devour! You can obviously add/subtract whatever you want to make it your favorite.

    Loving these, lady! You’re always so adventurous with your recipes! And I’ll say–everything you post on insta/snap looks OS DELISH! Also–really like the format of this post!
